Alcohol fermentation is a metabolic process in which microorganisms (especially yeast) convert sugars (such as glucose, fructose, and sucrose) into ethanol and CO2 under anaerobic conditions. In addition to its intoxicating effect, fermented foods are highly favored for their complex flavor characteristics due to the combination of yeast metabolome and raw biomass. Many foods (especially unpasteurized foods and probiotics) may continue to ferment after bottling and bagging, with alcohol content increasing over time.

In the United States, beverages with an ethanol concentration of ≤ 0.5% vol/vol1 are considered non-alcoholic beverages, while in Canada, this value is ≤ 1.1% 2. In the European Union, beverage labels with ethanol content exceeding 1.2% vol/vol are different from those below this value, while in the Muslim world, naturally fermented foods with ethanol content ≤ 1.0% can be considered Halal certified. These thresholds are very important because the regulatory and taxation conditions for the sale of alcoholic beverages are different from those for non-alcoholic beveragesMaterial. Other foods, such as fruits and sauces, may also contain alcohol produced through natural fermentation.

Equipped with flame ionization detector and PerkinElmer HS 2400 ™ PerkinElmer GC 2400 with headspace sampler (HS-GC/FID) ™ The system is an ideal solution for rapid and sensitive quantification of ethanol in food. Based on advanced injection technology and precise gas path control, HS 2400 HS-GC/FID can accurately quantify ethanol over a wide concentration range. The excellent Elite-BAC1 chromatographic column has a low-noise background, providing high sensitivity and stable quantitative performance for analyzing complex matrices in food.

This application article will elaborate on PerkinElmer5's first developed reliable, high-throughput food ethanol detection method, which analyzes the alcohol content in various commercially available beverages and foods, including fruit juice, soy sauce, and kombucha. Using PerkinElmer Simplicity Chromium ™ The chromatographic data system (CDS) software is used for data acquisition and processing. No matter where the operator is, as long as they connect to the VPN, they can achieve intuitive and high-throughput laboratory workflow and real-time data monitoring through a split touch screen interface.
