1、 Installation
1. The installation of the whole machine and the conditions that should be met for the installation position

(1) The oven should be installed indoors without any leakage, with a flat and hard floor, and should be able to withstand a weight of more than two tons.
(2) The left, right, and rear sides of the oven should be at least 40cm away from the wall, and the top of the oven should be at least 100cm away from the roof for easy installation, maintenance, and repair. There should be sufficient operating space in front of the oven.
(3) The ground should have good drainage facilities and good ventilation.
(4) There are no flammable, explosive, or corrosive gases indoors.
2. Installation of water supply system
Please connect the oven, solenoid valve, and valve to the water supply pipe with a water heating pipe. After installation, there should be no water leakage in the pipe.

3. Installation of smoke emission system
(1) Please use a round exhaust pipe for the oven
(2) The diameter of the chimney should not be less than 140mm, the chimney should not be too long, and detours should be minimized as much as possible. Otherwise, it will also increase the smoke exhaust resistance, causing difficulties in smoke exhaust.
(3) There should be a windproof device at the top of the chimney to prevent the backflow of smoke during windy conditions.
4. Power supply
The power supply of this machine adopts 3N-380V (i.e. three phase wires, one neutral wire, and one protective ground wire).

3、 Usage and maintenance

1. Usage method
(1) Baking operation
First, close the oven door, turn on the main power switch of the oven, and if necessary, turn on the lighting. Set the temperature controller to the desired temperature, turn on the rotary switch, and the oven will start heating up. After the furnace temperature reaches, turn off the rotary switch and the oven turntable will automatically position itself. After opening the furnace door and pushing the rack cart containing raw food into the correct position inside the furnace, close the furnace door, tighten the door handle, turn on the turntable switch, adjust the timer time, and then turn on the timer switch (the timer switch should be turned off to set the timer time, otherwise the setting is invalid). After the baking time is up, the buzzer will sound an alarm to remind the operator to come out of the oven, but the timing system will not turn off the heating power. Twist the exhaust knob to remove smoke, turn off the rotary switch, open the furnace door and pull out the trolley, completing one work cycle.
(2) Humidification operation
When it is necessary to bake and humidify, press the humidification button. This function is generally used in the production of French bread according to the process requirements.
(3) Exhaust operation
Twist the exhaust knob 3 minutes before the bread is about to be baked, and the oil fumes on the top of the stove will be discharged. Close this port before entering the furnace again.
(4) Food filling

Regardless of the type of hot air food oven, the variety, size, and shape of the baked food should be basically the same, and placed evenly. There should be a certain distance between layers to facilitate the circulation of hot air. Otherwise, it will cause uneven color of the food.

2. Daily maintenance
(1) Cleaning of the oven
Please cut off the electronic power supply to the oven before cleaning it.
(2) Maintenance of transmission system
Adjust the tightness of the belts in the transmission system every three months. Replace the total amount of lubricating oil for the reducer every six months. Add high-temperature grease to the turntable bearings every three months. Check the fastening screws of the transmission system every three months.
(3) Storage of Oven
If the oven is not used for a long time, please cut off the power supply and water source of the oven. Store the oven in a dry environment or heat it to 180 ℃ every half month to dry for 1 hour. To ensure that the electric heating tube will not get damp during reuse.
