In order to preserve abalone at room temperature for a long time without damaging its original nutritional components, color, aroma, taste, and body shape, a food freeze-drying machine is applied to the freeze-drying processing of seafood abalone, changing the traditional drying or sun drying methods.
The selected fresh abalone undergoes processing and cleaning, followed by pre-treatment processes such as ripening, cooling, soaking, color protection, and draining. It is then loaded onto a tray and placed in the material compartment of the food freeze dryer for 3-5 hours of low-temperature in-situ pre freezing at -45 ℃, followed by a 10 hour drying process. The temperature is controlled at -30~+30 ℃, and the vacuum degree is controlled at around 40PA. The dried abalone is then subjected to analytical drying for about 8 hours, with sublimation drying temperature controlled at 35~60 ℃ and vacuum degree controlled at around 30PA. After removing bound water, a freeze-dried abalone product containing 2-5% water is obtained. Because abalone crystallizes into solid water at low temperatures in a vacuum environment and directly sublimates into a gaseous state for removal, it does not damage its original structure or undergo oxidation reactions, preserving its original structure and nutritional components. After being processed by a food freeze dryer, abalone can be stored at room temperature for a long time with low water content and good rehydration properties. After rehydration, it can restore the original characteristics of abalone.
