Can black fungus extract taste good? Will it have any odor? During the research process, we also found that the odor in the black fungus extract is mainly caused by its specific chemical composition, which is one of the effective ingredients of black fungus and should not be removed. So, it is necessary to retain the effective ingredients of black fungus while ensuring that the taste is readily accepted by consumers. For this purpose, the taste of the product is adjusted by using β - cyclodextrin embedding, honey masking, and sugar and acid seasoning.
1.Processing of black fungusSoak the dried black fungus in warm water for about 3 hours. After the fungus is completely soaked, add about 300mL of purified water for maturation (95 ℃/5min), and beat it for later use.
2.solMix the suspension agent, sweetener, and white sugar evenly, add approximately 300mL of purified water at 80 ℃, stir and heat until fully dissolved, and there are no insoluble particles.
3.mixMix the processed black fungus paste with the dissolved glue solution evenly and set aside for later use.
4.homogeneity: Use 60 ℃ purified water to fix the volume of the mixed liquid to 1000mL, then add ethyl maltol and essence to flavor, and then homogenize under the conditions of 60 ℃, 25~35MPa/5~10MPa. Juice beverage production line
5.sterilizeAfter filling the homogenized material, it is placed in a high-pressure and high-temperature sterilization pot for sterilization, with sterilization conditions of 121 ℃/20min.
6.coolingPlace the sterilized sample in a water bath and cool it to room temperature to obtain the finished product.
